Easy Buttercream With No Cream Cheese...Though You Would Never Know It

In my house we never eat cream cheese, so I never have it when it comes to making frostings. This has led me to trying all different type of variations of buttercream, as sometimes I want a traditional sweet one and other times a saltier one that would compare with cream cheese frostings.

I can happily say that I have found one of my middle grounds for a non-cream cheese cream cheese frosting...sounds confusing right? Well its not and I promise it has ingredients that are already in your own house!

 

Salty Buttercream Frosting With No Cream Cheese

10 minutes

Makes enough to cover to 9" round cakes

 

Ingredients


2 sticks unsalted or salted butter (warmed but not melted)

4 cups powder sugar

1/2 tablespoon vanilla extract

1 teaspoon salt (if unsalted butter) OR 1/2 teaspoon (if salted butter)

 

Steps


Prepare a mixer with a paddle to make the frosting


Warm 2 sticks butter by microwaving for 30-40 seconds or until the butter can be squished but not melted


Place the butter into the standing mixer and whip on a medium speed till it is fluffy and light looking. Make sure to scrape down the bowl after 1-2 minutes then continue whipping


Add in 1/2 tablespoon vanilla extract and 1 teaspoon salt (if you used unsalted butter) OR 1/2 teaspoon (if you used salted butter) and mix till combined


Slowly, 1 cup at a time, add in the 4 cups of powder sugar till fully combined


Keep buttercream at room temperature if using that day, or refrigerate up to 3 days and then take out for 2-3 hours before use to bring down to room temperature
