Going, Going, Scone...The Quickest and Easiest Scone Recipe

I first stumbled upon this recipe when looking for a berry recipe online and I am always up for a good scone...so how could I resist? Plus the bonus of this being an under hour recipe, I had to try it out.
I have used all different fillings with these scones and each time they get better and better. I have done a chocolate chip with vanilla glaze, blueberry with lemon glaze, and a mixed berry with lemon and vanilla glaze.

Feel free to try out different fillings from nuts to berries to chocolates! You honestly cannot go wrong with any flavor profile you chose to try!
The Quickest and Best Scones
Time: 1 hour
Ingredients
Dough:
2 cups of All Purpose Flour
1/2 cup of cane sugar
1 tablespoon baking powder
1 pinch of salt
1/4 cup of cold butter (half of a stick)
1 egg
1 container of greek yogurt (any flavor)
One serving size
2 teaspoons vanilla extract
1 heaping cup of any filling
Frozen berries, chocolate chips, blueberries, ect.
Filling:
1 cup of confectionary sugar
1-2 tablespoons of milk
Process:
In a large mixing bowl, combine 2 cups of flour, 1/2 cup of sugar, 1 tablespoon of baking powder, and a pinch of salt

In a smaller bowl combine one cup (self serving) of greek yogurt, 1 egg, and 2 teaspoons of vanilla extract. Mix these wet ingredients together
Get 1/4 cup of cold butter (half of one stick) and a cheese grater. Grate the cold butter into the large bowl with the dry ingredients. Once you have grated all of the butter, use your hands and mash the butter into the dry mixture
Once you cannot see the butter anymore, the dry ingredients and butter should be the size of marbles and very dry. Next pour in the bowl with the wet ingredient and stir

The dough should come together and be dry but still in the shape of a ball. Next add in the heaping cup of your filling and continue to stir

Pour the dough onto a floured counter or surface and start shaping the dough into a circle at a thickness of one inch. You do not want it too thick or it will take longer to bake

Once you have a circle of dough with a 1" thickness, cut the dough into triangle wedges
with a pizza cutter or knife

Preheat the oven to 400° and start transferring the dough wedges onto the parchment paper lined baking sheet. Alternate the triangle wedges on the baking sheet

Sprinkle the dough with a pinch of cane sugar onto the top of each dough wedge and place into the oven for 15-18 minutes or until golden brown on top

While the scones are baking, begin prepping the icing glaze. In a small bowl combine 1 cup of confectionary sugar and 1-2 tablespoons of milk (the more milk, the runnier the glaze). You can add extra flavors to the glaze but decrease the amount of milk
To try a lemon glaze only include 1 tablespoon of milk and juice 1/2 of a lemon or more depending on personal taste

Once scones are cooled (10 minutes) drizzle the glaze generously over the scones and enjoy!
