Oh my Pumpkin...Cinnamon Sugar Pumpkin Donuts!

It is finally fall, which calls for all things pumpkin, sugar, spice, and everything nice! Thank you to Bridget Bowman for helping me make these and always being open to try new recipes!

If you are looking for anything that just makes you want to put on your warmest sweater, go crunch leaves as you walk outside, and sit by the fire...then these are definitely for you! And you do not even need to fry these amazing fall treats, all baked in the oven.

Quick and Easy Cinnamon Sugar Pumpkin Donuts

30 Minutes Total

~6 donuts

Ingredients


Donut Batter:

1 1/4 cup of all purpose flour

1/2 cup of light (or dark) brown sugar

1/2 teaspoon salt

1 teaspoon baking powder

1 teaspoon cinnamon

1/2 teaspoon ginger


1/4 cup 100% pumpkin purée

1 tablespoon pumpkin pie spice extract

2 1/2 tablespoon melted unsalted butter

1/2 cup milk (any %)

Coating:

3 tablespoons melted unsalted butter

1 cup cane sugar

1 1/2 tablespoon cinnamon

Steps:


Preheat oven to 350°F


In a large bowl, combine all dry ingredients: 1 1/4 cup of all purpose flour, 1/2 cup of light (or dark) brown sugar, 1/2 teaspoon salt, 1 teaspoon baking powder, 1 teaspoon cinnamon, and 1/2 teaspoon ginger



In another bowl combine all wet ingredients: 1/4 cup 100% pumpkin purée, 1 tablespoon pumpkin pie spice extract, 2 1/2 tablespoon melted unsalted butter, and 1/2 cup milk (any %)


Slowly mix in the wet ingredients into the bowl of dry ingredients, until just mixed...do not mix too much

Once the batter just comes together, spoon the mixture into a greased donut pan and fill to the top of the pan

Bake for 10-11 minutes or until the outsides are golden brown (even with the orange tint of pumpkin!). You can also test by lightly pressing on donuts and waiting till they spring back


Let donuts cool in the pan for 5 minutes then transfer to a cooling for rack till completely cool. At the same time, melt 3 tablespoons of unsalted butter (put aside in a wide bowl or deep plate)

Separate from the butter, mix together 1 cup of cane sugar and 1 1/2 tablespoons of cinnamon in a medium bowl

When the donuts are cool to the touch, dip them in the melted butter and roll in the cinnamon sugar mixture until fully coated. Continue doing this till all donuts are coated

Fill a glass of cold or warm apple cider and enjoy these fall donuts!
